roasted cauliflower + tahini sauce

toss 320 grams of cauliflower in 4 tablespoons of canola oil. season with salt, pepper, and parsley flakes. put in an airfryer until browned and crisp [around 15 minutes at 320 degrees]

make the sauce while you wait

  • 4 tablespoons of tahini
  • 6 tablespoons of lebne
  • 40 grams 2% greek yogurt
  • juice of one lemon
  • seasoned to taste using salt, saffron, and garlic powder.

top with:
the roasted cauliflowers, parmesan cheese, pignoles, and sunflower seeds.

yes

good question! 👍
although it takes a bit longer [inactive time though, so not too bad]
the flavor and texture turn out richer.

Try with these adjustments:

  • pre-heat oven to 375 degrees.
  • save the parsley flakes until after the cauliflowers are done cooking.
  • roast for 30-45 minutes, or until the tips begin to brown.

this method will makes your home smell 😋


alternative method:
(most challenging and results in the softest interior and a crispiest texture)

  • flash boil the cauliflower ahead of time in salted water until they fall apart when poked with a fork.
  • drain and let dry for 30 minutes.
  • broil in the oven for 10-15 minutes, keeping a close eye so they don't char.

trade offs, haha.
