Now this is also a weekly meal. I am making this on the weekend for sure. It tastes so incredibly creamy and cheesy, you just don't want to stop. This is a pretty flexible recipe and you can add anything that you want with it. We usually have cauliflower rice or zucchini noodles with ours, but you can have a salad or if you are going the less healthy route, add some cooked pasta in there and you have a perfect bake for dinner. I usually make a big batch and have it for lunch or dinner the next day, but this can also be frozen as a ready cooked meal. So, lets get to the recipe:
Ingredients
500-800g Skinless Chicken Breasts
1 Punnet Mushrooms
3 Tsp Garlic
1 Red Pepper
2-3 Jalapeno Chilies (Depending on how hot you like it)
2 Tubs Cream Cheese
2 Cups Grated Cheddar
2 Tsp Paprika
1 Tsp Basil
3 Tbsp Hot Sauce (optional)
Method:
- Cut the chicken into strips.
- In a bowl, add cream cheese, hot sauce, basil and paprika and stir until the cream cheese is soft.
- Once the cream cheese mixture is soft, add the chicken and coat the chicken in the cheese and add to a greased pyrex oven dish and spread.
- Chop mushrooms, jalapenos and pepper, add to the mix with the garlic and stir in.
5.Cover the dish with the grated cheddar, cover with tin foil and put in a pre heated oven at 180 degrees celsius for 30 minutes. - Remove from the over, remove the foil and put the dish back into the oven for 10 minutes so that the cheese can brown.
- Once cooked, let it stand for a few minutes and then serve.
This promises to be a healthy dish that is packed with flavour and you can go to bed with a guilt free conscience!

This was a great read. I am a fan of cheese linners. Linners because I don't like to eat late. I can't wait to try it out. I don't usually eat meats or chicken just once in a blue moon because I prefer a vegan diet but I like to spoil myself on a rare occasion and will definitely put this on my to do list the next time I decide to spoil myself.
I have a couple questions Incase I want to follow your recipe again but without meats.
What do you recommend for substitute on chicken for vegetable? I'm curious to your opinion.
Also I don't have an electric oven, I have a gas one instead and cooking is different on a gas oven. I might have to purchase a thermometer... Oh well.
Also silly questions men ask, what's a "punnet"? And how much in quantity is that?
How much is a tub of cream cheese? Because where I live they sell most things by the grams or kilo.

Hi @elcerebro thanks for the great feedback and for the questions! I love using this recipe with broccoli and/or cauliflower and it makes a great carb free mac n cheese :D We sometimes treat ourselves to a proper pasta mac n cheese but it's quite a rare occasion lol. Some other ideas could be to use brinjals sliced (Egg plant/aubergines) I'm not sure what you call them, or you could also use zucchini (baby marrow"sliced length ways. You can really be creative with this, you could even make a veggie bake with a combination of your favorite roasting vegetables.
About your gas oven, I am so jealous!!!! I love a gas oven!! I find it bakes things much more evenly, and faster too lol. I think it is best to make the heat a little lower, and to keep an eye on it. With the different veggies, I usually steam the veggies that take longer to cook first for 10 minutes, like cauliflower for example, this ensures that all veggies are soft. I hate biting into a warm uncooked piece of potato or something like that lol.
A punnet is what mushrooms come in here in South Africa, it is about 200g of mushrooms, and a tub of cream cheese is a normal tub around 230g.

Thank you for replying. I wrote down your fantastic ideas. I never really cooked by myself too often but since I am now single and living alone I thought I would utilize the free extra time and learn new things as I go along this journey.
