This recipe is simple and easy!
Ingredients
Couscous -
1 Cup of Couscous
A Pinch of Salt
1 tsp of Olive Oil
1/2 Cup of Hot water
Fluff Couscous with a fork
Salad -
3 Cups of Fresh Parsley
4 Sprigs of Fresh Mint
1/2 of a Green Onion
1 Medium sized Tomatoe
1 Small Cucumber (Deseeded)
Juice of 1/2 a Lemon
Chop everything into small pieces and mix together with the Couscous.
I love to make this in Summer time as a refreshing salad to add to any meal.
Last year I grew my own Parsley, Tomatoes and Cucumbers. By the time they were ready to be picked it was the perfect time to eat this cooling and refreshing Tabbouleh.
