                                                          Dark chocolate mousse

This is a dose for 30 persons.



Chocolate 45/50% cocoa

400g dark chocolate

600g whipping cream

10 yellow egg

10 egg whites

2 leaves of gelatine


Method:


whipped cream .and after putting it in the fridge.

egg white whipped with a little sugar.

Put the gelatin in a little water. Soften it, squeeze it and put in a pan with a bit of Cogniac.

Melt the chocolate, then add the yellow egg and beat with a whisk.

Add gelatin

Add cream

Add the whipped egg white

Stir carefully and place in a bowl.

Let stand in refrigerator. for 1 hour or 2.


                                          

                                               White chocolate muss


450 white chocolate

6 eggs

2 leaves of gelatine

600g whipping cream


Its the same process of dark chocolate muss.
