I almost forgot how impressed I was when I made a Dutch baby for the first time, to me it is a great alternative to crepes and pancakes, and it tastes delicious. Don't get me wrong, I love crepes and recently I have developed a taste for pancakes, too haha +some skill to add to the mix! But, there's just something about this humble breakfast food that I really love. It's versatile, simple and absolutely delicious!
Ingredients:
- 2 eggs;
- 1/2 cup flour;
- 1/2 cup milk;
- 1-2 tablespoon sugar;
- a pinch of salt;
- 1/2 teaspoon vanilla extract;
- 1 teaspoon cooking oil or butter.
For serving:
- confectioner's sugar;
- fresh blueberries;
- maple syrup.
Directions:
Place all of the ingredients except for cooking oil in a mixing bowl and whisk into a smooth mixture. Make sure there are no lumps in the batter. You can also combine the ingredients in a blender for a silkier texture. Set aside.
You can either use a cast iron skillet or any other type of oven proof dish to bake this Dutch baby. Preheat your oven to 420 F, heat up cooking oil or butter in the center of your dish and pour the batter in. Bake for 15-20 minutes or until the edges turn golden brown.
Serve this beauty warm with your favorite choice of fresh berries, maple syrup and/or nuts. I had some blackberries that I used for garnishing my Dutch baby, maple syrup for gloss and some confectioner's sugar.
Enjoy!

Anything with blueberries is a winner. I'm hoping for some yield from my bushes this summer.

Thanks, lady! Yeah, totally! Too much vanilla can ruin the dish, however half a teaspoon of it is not a lot, I didn't even taste it to be honest.
