Lentils and Quinoa Salad

Last Monday, I made this Lentils and quinoa salad for dinner. It’s one of my favorite because it contains a ton of protein and fiber. This salad is my life saver when i feel so lazy to cook and tired after work. it’s so easy to prepare, you just need to boil the lentils and quinoa and then mix it with green vegetable and dinner is ready. Here my recipe for Lentils and Quinoa Salad.

LENTILS AND QUINOA SALAD

1 cup of lentils
1 cup of quinoa
50 gram of arugula
50 gram chopped of cucumber,
50 gram chopped tomato
50 gram romaine lettuce
2 tbsp of soy sauce
a cup of chopped mint
Juice of 1/2 lemon

Instruction :

 * Bring 2 cups of  water to a boil, then add a cup of quinoa.  Reduce the heat to a simmer and cover. Cook for 10 to 5 
    minutes, until quinoa is dry and fluffy.
 * While the quinoa is cooking, in a separate pot, bring 3 cups of water to a boil, then add a cup green lentils, cook for 
    20 to 30 minutes and add pinch of salt to give a flavor.
 * When the quinoa and lentils are both cooked, put quinoa, lentils and the rest of ingredients in a large bowl and mix 
    it well.  Served with chopped of mint as a garnish.

I simply can not get enough of this super healthy salad. Lentils quinoa Salad is full of fiber, whole grains, and protein. Quinoa is a fiber- rich whole grain also complete protein.
