The Cachapa is a fine cake of ground corn, with cheese and sugar, cooked in budare; It is known throughout Venezuela. This sweet and wonderful transformation of the corn in the form of a thin and round cake is usually accompanied by a good "cheese e'mano" and smeared with butter. The recipe I provide below only requires a lot of love and is prepared with very, very tender corn.
Ingredients
12 "1 Dozen" of very tender corn
Sugar to taste
¼ tsp of salt
Milk
Butter
1/8 Kg. Soft white cheese
Preparation
The sweet corn is shelled and they are ground very fine, then they mix, the sugar and the salt, until obtaining a homogenous mixture, of being very thick adding a little of milk until you are smooth.
In a budare or hot pan spread lightly with oil, place a little of the mixture (making a thin cake) let it brown and then turn brown on the other side. The cachapas are eaten very hot and they are spread with butter, they can be accompanied or stuffed with hand cheese or simply with hard grated cheese over the cachapa is also accompanied by fried pork. La Cachapa es una torta fina de maíz molido, con queso y azúcar, cocida en budare; es conocida en toda Venezuela. Esa dulzona y maravillosa transformación del maíz en forma de torta fina y redonda suele acompañarse con un buen "queso e´ mano" y untarse con mantequilla. La receta que proporciono a continuación solo requiere de mucho amor y que se prepare con maíz muy, muy tiernos.
Ingredientes
12 “1 Docena” De Maíz muy tiernos
Azúcar al gusto
¼ cdta de sal
Leche
Mantequilla
1/8 Kg. queso blanco suave
Preparación
Se desgranan el maíz tierno y se muelen muy finos, luego se mezclan, el azúcar y la sal, hasta obtener una mezcla homogénea, de quedar muy espesa agregar un poco de leche hasta quedas suave.
En un budare o sartén bien caliente untado ligeramente con aceite, se coloca un poco de la mezcla (haciendo una torta fina) se deja dorar y luego se voltea dorando por el otro lado. Las cachapas se comen bien calientes y se untan con mantequilla, se pueden acompañar o rellenar con queso de mano o simplemente con queso duro rallado sobra la cachapa también es acompañado de cochino frito.
