Recipe: Chocolate and Cranberry Panettone Pudding | Christmas Recipe.

Hey Steemians!

Today I picked up a Panettone loaf for my family's Christmas dinner this year. I will use the Panettone to make a Chocolate and Cranberry Panettone Pudding as one of three desserts for our Christmas celebration this year.

This recipe is really easy and can be made by anybody. It involves little preparation time and it is best prepared the day before and left to soak overnight before placing in the oven approximately 40-50mins prior to your intention to serve it.


Now for the recipe!

Ingredients:

- 1/2 of a Panettone loaf

- 300mL of pouring cream

- 4 egg yolks

- 3 eggs

- 1 tablespoon of fine caster sugar

- 1/2 cup of cranberries, can be fresh but I used dried.

- 1/2 block of milk cooking chocolate. 

- 1/2 cup of strawberry or raspberry jam (approximately).

- 300mL of whipping cream to serve. 


Method:

1) Take a large baking or casserole dish and rip chunks of Panettone cake to a desirable size and place in dish. 

2) Scatter 1/2 cup of dried cranberries through the Panettone in the baking dish.

3) Take the chocolate and break into squares and place evenly throughout the baking dish.

4) Take a teaspoon and spoon a desired amount of the strawberry jam throughout the Panettone cake, chocolate and cranberries.

5) For the custard mixture take a mixing bowl and place in the sugar, eggs, egg yolks and cream and whisk until its the consistency is that of a runny custard.

6) Pour over the dry ingredients in the baking dish and leave in the fridge to soak overnight.

7) After allowing the mixture to rest overnight place the baking dish in the oven and bake for 40minutes at 180 degrees Celsius. 

8) Take the dish out of the oven and allow it to rest for 5-10mins before serving with whipped cream.

Alternative Recipe:

You can substitute out the milk chocolate for white chocolate and use either raspberries (fresh or frozen) instead of cranberries.
