Indian Traditional PATHIR PHENI or CHIROTI

 Hi,Everyone today also I given a special desert PATHIR PHENI or CHIROTI.

    I think only some of you know about this dish .This is very famous in Kerala and TamilNadu also.

   It is very simple and tasty dish.It contains some crunchy ness also.This sweet has lot of layers and it turned out so crispy.

     Hear I use suger syrup to dip this in,but you can also use dust it with powder suger and serve it.

   Actually this PENI is served Traditionaly alsong with BADAM MILK.

Now we go to recipe. :-

INGREDIENTS. :-

For Dough. :-

  • Maids. : 1 cup

  • Rava/sooji. : 1/4 cup

-Baking powder. : 1/4 tea spoon

-Salt. : a pinch

-Suger : 1 table spoon

  • Ghee. : 1 table spoon

-Water. : as require

For Coating Paste :-

-Ghee. :3 table spoon

  • Rice Flour. : 5 table spoon

For Suger Syrups. :-

  • Suger :250 gems

  • water. : 100 ml

  • Cardamon - 4 pods

  • Cashews/Badam/Pista. : 10 finely chopped

PREPARATION. :-

STEP 1 :-

 First take a mixing bowl in that add maidha flour, rewa,salt ,baking powder and suger.Then we mix very well.

STEP. 2 :-

  Then we add ghee to this mixture and rub together with your hands.

STEP 3 :-

  Then we add required water and make like chapatti dough.

STEP 4 :-

Now we cover this dough with a lid and let it rest for 30 minutes.

STEP. 5 :-

   In this mean time,we take 3 table spoon if ghee and rice flour in a bowl and make into a thick paste .For this we follow given images.

STEP 6 :-

  After 30 minutes,take the dough and divide into 6 equal parts,like given image.

STEP. 7 :-

Now we take one portion and start rolling to a thin circle ,like given images.

STEP. 8 :-

Repeat this process for all remaining 6 potions.Now we make all 6 circles,like this.

STEP 9 :-

Now we take one circle in front of you and apply the rice flour paste over that.For this pls follow given images.

STEP. 10. :-

Now we cover another one circle on top of that.like this.

 And speed paste again over it ...until you finished all the circles.

STEP. 11 :-

 Now we apply the rice flour paste on the top of the circle and start rolling to a tight log...

Now the roll look like given image

STEP. 12. :-

Then we cut out the edges

Then we cut this roll into equal parts like given image.

STEP. 13 :-

Now take one portion in front of you and start rolling as a thick circle.

Now we repeat this process to all of the remaining parts.now we make all circles

STEP. 14 :-

  Now we heat oil for deep fry these circles. You cook these circles until they turned kite brown,then we remove from this and transfer to a paper towel.for this pls follow given images.

STEP. 15 :-

 Mean time we make a suger syrup.For this first we heat suger along with water and cardamom pods.

Wait ,let it go boil very well

Bring it to string consistency

Hear we see string forming.....set aside for a moment

Now suger syrup is ready.

STEP. 16. :-

  Now we dip the hot fried PATHIR PHENI in the suger syrup and take it out a wire rack....

STEP 17. :-

   After it cooled completely, then we transfer to a serving plate and garnish with crushed caushw nuts/Badam and serve with Badam Milk.
