This is my current favourite after dinner treat when I'm craving something sweet but don't want to consume too much sugar!

Erin's Fruit Filled Pastry

Ingredients:
2 sheets Puff Pastry
Frozen Fruit eg. Berries, Mango. Anything that takes your fancy!
Eggs or Butter to brush on top of the pastry
Cinnamon

Preheat the oven to 200°C (392°F). Cut the pastry into 4 squares and place some fruit in the middle of the squares.
Fold up the pastry ensuring it's smoothed down neatly then place on a lined baking tray.

Brush the pastries with an egg wash or butter and sprinkle with cinnamon.
Place in the oven for approx. 20-25 mins until golden brown.

Serve with some cream or custard if you want to splurge and...ENJOY!!

So easy and so delicious! A great sweet treat without any added sugar!

I'm a sucker for a good pastry. I'd probably just use blackberries though. I love blackberries. I've been cooking with coconut flour for gluten free; sugar free desserts. I made a really awesome coconut cake recently that was healthy for my diabetic mother.
