Ingredients | Ingredientes:
- 1 duck (about 2 kg) | - 1 pato (cerca de 2 kg)
- 1/2 Portuguese chorizo | - 1/2 chouriço
- 1 slice of ham | - 1 fatia de presunto
- 2 medium onions | - 2 cebolas médias
- 1 clove of garlic | - 1 dente de alho
- 2 folhas de louro | -2 folhas de louro
- 5 grains of black pepper| - 5 grãos de pimenta preta
- 400 g rice | - 400 g arroz
- juice of two lemons | - sumo de 2 limões
- olive oil (to taste) | - azeite (a gosto)
- salt (to taste)| - sal (a gosto)
Directions
1 - Prepare and season the duck with salt 12 hours before. |
1 - Preparar e temperar o pato com sal com umas 12 horas de antecedência. |
3 - Add the chorizo and ham slice. Bring to a boil over high heat. When starts boiling, reduce to medium-low heat and cook the duck for more 1 hour (if you have a pressure cooker, the time will be much reduced). |
3 - Juntar o chouriço e o presunto. Deixar levantar fervura. Quando começar a ferver, reduzir para lume médio e deixar o pato cozer por mais 1 hora (se tiverem uma panela de pressão, o tempo será inferior). |
4 - When the duck is cooked, let cool slightly. Remove the skins and bones, flake it with a fork. Cut half of the chorizo in slices (for garnishing), and the rest in small pieces (cubes). |
4 - Quando o pato estiver cozido, deixar arrefecer um pouco. Retirar as peles e ossos, e desfiar a carne com um garfo. Cortar metade do chouriço às rodelas (para enfeitar) e o resto em pedaços pequenos (cubos). |
6 - In another saucepan, place the olive oil, one chopped onion and garlic clove, and one bay leaf. Saute over low heat about two to three minutes. |
6 - Noutra panela, colocar azeite, uma cebola e alho picados e uma folha de louro. Refogar durante dois a três minutos em lume brando. |
7 - Add the rice, stir and fry it in the olive oil for about one minute. Pour the filtered lemon juice and duck cooking water (twice and a half the rice volume), stir and bring to a boil over high heat. When it starts boiling, season with ground black pepper, reduce to low heat and cook about 10 minutes. |
7 - Juntar o arroz, mexer e deixar fritar no azeite durante um minuto. Adicionar o sumo dos limões e a água de cozer o pato filtrados, mexer e deixar levantar fervura em lume forte. Quando começar a ferver, temperar com pimenta preta moída, reduzir o lume e deixar cozer por 10 minutos. |
9 - In a baking dish place a layer of rice, a duck layer and the chorizo cut in cubes, and finally, another of rice (wish I had more rice, maybe I should have used 500 g instead of 400g). |
9 - Numa travessa de ir ao forno colocar uma camada de arroz, uma de pato e chouriço cortado aos cubos, e finalmente outra de arroz (gostava de ter mais arroz, provavelmente devia ter usado 500 g em vez de 400g). |

What is Sunday Cook?!
This Sunday Cook project began with a strong will to contribute to Steemit with my personal view of Portuguese cuisine. I really believe we have plenty of good food. Despite I'm not a professional or nothing similar, I can assure that I'm doing my best, and hopefully, I'm improving my skills too!
On Sundays (cold Sundays), I like to prepare more elaborate and delicious food. It requires time and patience. Usually, I cook some traditional Portuguese food, or at least with Portuguese inspiration :) I try to do it in a healthier way, using the minimum fat as possible, and normally I pick some recipe and transform it. During the week I don't like to spend much time cooking (no time at all), that's why I get totally motivated to cook on Sundays!!

O que é o Sunday Cook?!
Este projeto iniciou-se com uma grande vontade de contribuir para o Steemit com a minha visão pessoal da cozinha Portuguesa. Eu considero que temos excelentes pratos. Apesar de não ser profissional nem nada que o valha, garanto que tenho feito o meu melhor, e espero estar a melhorar os meus dotes culinários!
Nos Domingos (quando está frio), gosto de preparar comida mais elaborada. Requer tempo e paciência. Normalmente, cozinho pratos da cozinha tradicional Portuguesa, ou pelo menos inspirados na mesma. Tento cozinhá-los de uma forma saudável, usando o mínimo de gordura possível e normalmente pego numa receita e adapto ao meu gosto. Durante a semana não gosto de perder tempo a cozinhar (nada mesmo), e é por isso que me sinto motivada a cozinhar nos Domingos!!

Thank you!! I haven't mentioned, but this recipe can also be prepared with chicken. I don't know which is more easy to find in your region. Normally I would do this recipe with chicken, it's cheaper than duck.

É um prato que gosto bastante mas raramente como porque sei que não tem o sabos do limão que adoro desde que a minha mãe fez em casa. Na rua acabo sempre por pedir outros pratos em vez deste!!
