Veggies can be yummy..... Spinach!

We have all seen pop eye, so there's no need for me to tell you how good spinach is! What I will show you instead is a way to make it super yummy! So today I am making Spinach baked eggs!

Step 1/ Pick some Spinach and Parsley. Both looking a tad sorry after their brush with death 2 weeks ago.
Never mind our odd sheep who have eaten that much gum leaf they think they are koalas!

Step 2/ Wait patiently for some eggs. Que elevator music..... and an intro to Mrs Pea Body our light sussex hen! She is a busy body of a chook and a chatterbox with an evil eye! She usually gives us a few eggs a week! Thanks Mrs Pea Body!

Step 3/ Go inside and gather the remaining ingredients which are grated tasty cheese and prosciutto or sliced ham. Turn the oven on to 180 degrees Celsius.

Step 4/ Grease some ramekins with cooking spray or butter.

Step 5/ Place spinach around the inside, be generous as it shrinks quite alot (and its good for you)!

Step 6/ Layer the ham or prosciutto over the spinach. If you prefer you can leave this step out or add sliced tomato instead.

Step 7/ Crack an egg or two on top...

Step 8/ And a generous amount of cheese (don't worry, you burn it off in the garden... )

Step 9/ And bake them in the oven for 10 to 15 minutes depending on how you like your yolks!

Step 10/ Add salt and pepper to taste and garnish with parsley which is also high in iron!

Yummy!
