Instant Pot Mocha and Peanut Rubbed Pork Roast

I tried something new today, and it was really nice.  Both John and I agree the only thing that would have made it better was adding Coca Cola to the sauce, to cut the slight bitter flavor.  I give you mocha peanut rubbed roast made in the instant pot, my favorite kitchen appliace at this point.

I based this off of a recipe online and honestly winged it.  For the rub, I used:

4 T instant coffee

1 T ground mustard

1 t ground cumin 

1 T ground garlic

1 t ground cumin 

1 t paprika

1 T onion powder

4 T peanut flour

I cut up a pork roast into chunks

It was still partially frozen.  I love that feature of the Instant pot, using frozen meat is no issue.

Stir to combine the mix, add it to a bowl and add the meat and toss until coated completely.

Get some butter melting on the saute setting on the Instant pot.

Add the meat.  Prepare 2 cups of water with some of the instant coffee and a bullion cube, I use vegetarian for lack of MSG.

Just pour the coffee mixture over top.

I used a little corn start slurry to thicken the sauce.

Made some fancy mashed potatoes

I like that you include so many photos into these, but I should mention if my internet were any slower than it already is I would be here 30min trying to load it, I'm not sure how many others have the same problem but figure I'll be the one that says something incase they can't even load to comment, lol

These guys are a mini conglomerate. I don't know if they realize it but that is a mechanism for growth. When you spin 12 plates and periodically dump the worst two and pick up two new ones, you could be on the path for solid growth. I am glad they found freedom. God Bless Mexico....
