Once upon a chilly Saturday morning, following a busy week with students coming and going plus breakfasts and dinners at Lily's Cottage, Mama felt she deserved a lazy start to the day.
The weekend guests were laid-back regulars who did their own thing but made it clear that they were looking forward to the usual Sunday morning Crumpets; but that is easy peasy and tomorrow's worries :)
It was mid morning by the time she had her first cup of strong dark coffee with homemade rusks (almost like a biscotti for those who are not familiar with South African rusks; something we dunk in our coffee). Excuse the digression, but that is typical Mama :)
Opening the refrigerator to see what she could put together for brunch, two beautiful shiny peppers greeted her, a bright yellow and a deep red one.
Her brunch creation would be French Toast Parcels and I will show you how to make this, step by step.
Back to those stunning peppers, she felt sorry that she had to destroy such beauty, but they would in any case soon wilt and be useless.
She cut the peppers in half, diced them and returned the other halves to rest a while longer in the refrigerator.
She grated some cheese (just enough for 2 sandwiches) and took out 2 eggs.
Mama took 2 slices of healthy seed bread, cut out the middle section, leaving a narrow border all around reserving the cut-out section.
She heated a super thin layer of oil in a large pan (adding a pat of butter for extra flavor), and flash fried the peppers.
Mama moved the peppers into two heaps, shaping them so they could fit inside her bread 'frames'.
She placed the bread in the pan to frame the peppers, pressing the bread down firmly to avoid leakage with the next step. At this stage Mama could have added some diced Ham, crispy fried Bacon, smoked Chicken or Fish, but alas, her stocks had been depleted by the students meals, so the peppers and cheese would have to suffice.
Mama beat the 2 eggs together, adding her favorite seasoning, and carefully poured it onto the peppers.
Next, Mama sprinkled the yummy grated cheese on top, before Papa Bear ate it all as he was getting quite peckish now & a tad impatient as well :)
Lastly she took the bread shapes and pressed them down to cover the filling.
Now it was time to turn the bread parcels and toast the other side in the frying pan, revealing lovely caramelised bits. Papa Bear is now hovering closer as the aromas are wafting through to the tv lounge!
