Today we make a green pie! It's tastiness is only surpassed by the easiness of making it :) This is one of my favorite meals of all time. What you need is about 1kg of leeks, a cup of fine quality rice, phyllo dough, eggs & milk, salt & pepper.

First thing you want to do is throughly wash the leeks.

Cut them in half, and then slice them to smaller stripes. Cut in small pieces.

Cook the leeks first, until they lose their water. Add a cup of rice and a lot of pepper, salt to taste. Cook the mixture for about 5 minutes.

Meanwhile, prepare 4 eggs and somewhere between 1/2 - 1 liter of milk, depending on the size of your pan.

Use a mixer. Mix up the eggs first, and then add milk. You want to make it completely homogeneous.

Grease the pan with some sunflower oil. Place 4 sheets of phyllo dough. Divide your leeks & rice mixture into three parts, as we want to have 3 layers.

Spread it around nicely, and cover with 4 more sheets of phyllo dough. Repeat, creating 3 layers.

On the top, put 6 sheets of phyllo dough. Cut up the pie in advance, and sprinkle some more oil on top.

Now, pour the cream over the pie. Ideally, it should cover the whole thing. Leave it for 10 minutes, so the pie can soak up the creamy mixture.

Put the pie in the preheated oven. Bake for about an hour. Take it out, and voila! Doesn't that look delicious?

Take out the sliced pieces and enjoy with some yogurt. Sometimes I put some soy sauce over, it goes wonderfully with this pie!
