Have absolutely no idea what to make for lunch? How about churrasco?!
Churrasco (skirt steak) is a very tender and thin piece of meat that can be grilled, seared, or broiled. The best churrasco that I've ever had was juicy and tender, and beautifully paired with chimichurri sauce.
Marinating is key. Marinate it with salt, pepper, lime juice, cilantro, Worcestershire sauce, adobo (low sodium), and lots of crushed garlic. I prefer to marinate overnight, but 4 hours prior will do, or an hour, or none lol, it will taste bangin anyway you do it, as long as the seasoning of your choice compliments the natural flavor of the meat. A valuable advise that my mother gave when she taught me how to cook was that measurements are based on someone else's taste. Add or reduce the amount of any seasoning to any recipe to make it how YOU like it.
It is very easy and quick to cook churrasco, but easy to burn, so be careful to keep an eye on it as it cooks. 4 to 6 minutes each side. Once removed, LET IT REST. This will let all of the juices from the meat settle and create that juicy-tender delicia.
Churrasco with Chimichurri Sauce Recipe
Servings: Serves 2
Ingredients for Churrasco and Marinade
1 1/2 lbs of churrasco
1 tbsp himalayan pink salt
1 tbsp black pepper
1 tbsp lime juice
1/2 cup of cilantro
1 tbsp Worcestershire sauce
1/2 tbsp adobo
3 garlic cloves
Ingredients for Chimichurri Sauce:
1 cup of cilantro
1 cup of culantro
3 cloves of garlic
1 whole red onion
3 tbsp of fresh lemon juice
1/2 tsp of black pepper
1/2 tsp of himalayan pink salt
1/2 cup of olive oil
1/4 cup of red wine vinegar
Directions:
Marinate the meat either the night prior, 4 hours prior, or even 30 minutes prior.
Heat cast iron, or grill to medium high flame.
Cook churrasco for 4 to 6 minutes on each side, depending on your preference. Make sure to only turn once on each side.
While churrasco cooks, blend all ingredients to make chimichurri sauce. Set aside.
Remove churrasco from flame and let sit for about 10 minutes before slicing.
Pour chimichurri sauce on top of churrasco with additional chopped cilantro is desired ( I love cilantro on everything).
