A piaya is a muscovado-filled unleavened flatbread from the Philippines especially common in Negros Occidental where it is a popular delicacy. It is made by filling dough with a mixture of muscovado and glucose syrupThe flatbread is popular in Bacolod, in Negros, where most of the sugar in the Philippines comes from. The dough is made simply with flour and water.
This piyaya has soft and flaky crust with a distinct concentrated syrup from muscovado sugar that gives a gooey texture every time you bite. It’s one of the best Filipino snack ever. It is a sweet toasted flatbread. It has thin crust with a hidden muscovado filling or sometimes ube filling and toasted in a gridle. The piaya has various variants, the most popular is the ube (purple yam) piaya. When you eat this, be sure to have a glass of water nearby. It’s very very sweet.
