Sweet-cheese Roll

Is is an extremely delicious sweet-cheese roll that is gluten free, no flour and no sugar. I've prepared it for my special guests - my cousin and his pregnant wife. The only disadvantage was that I had to prepare it the day before, because the longer it is in the fridge, the easier is to cut. So here it the recipe:

Products:

  • 125g unsweetened chocolate!
  • 125g coconut sugar (or 12 dates)
  • 4 big eggs - separated egg yolks from the egg whites
  • 1/4 tsp salt

For the cheese-cream filling:

  • 250g cream cheese (I used cashew cream cheese)
  • 100ml whipping cream (I used lactose-free whipping cream)
  • 1/4 tsp vanilla
  • 4 tbsp honey

How to prepare:

  • Melt the chocolate in a double-boiler and leave it to cool
  • Mix the coconut sugar with the egg yolks. If you decide to use dates, you have to mix them in a blender.
  • Add the melted chocolate to the egg yolks.
  • Mix the egg whites in a separated bowl with a pinch of salt till you have a snow whites
  • Add the snow whites to the chocolate mix slowly mixing with a wooden or silicone spoon
  • Cover a baking pan with a baking sheet and Pour the chocolate cake batter onto a butter-greased silicone mat or piece of parchment paper
  • Bake 15-20 minutes in a 180°C oven and leave it to cool
  • Whip the whipping cream
  • Add the cream cheese, the vanilla and the honey to the whipping cream and mix well.
  • Spread the cream on the cake and put some strawberries on it (like on the picture)
  • And roll the cake!

If you wish, you can pure some chocolate ganache all over the cake or sprinkle it with some cacao powder.

The roll on the picture below is cut on the same day I made it. So I recommend to cut and eat it on the next day :)
