Express sorbet with raspberry
A simple recipe that does not require an ice cream maker.
Preparation: 10 minutes
Freezing: 1 hour minimum
Ingredients for 6 people:
500 g frozen raspberries
80 g caster sugar
1 glass of water
1 egg white
Lemon juice (1 lemon)
Preparation
Mix frozen raspberries until they are well reduced.
In a bowl, dissolve the sugar in the water, then add this raspberry syrup, mix with the blender.
Add the lemon juice and the egg white, mix for 3 minutes.
Place the preparation in the freezer for at least 1 hour.

I love raspberry sorbet - but only if it is vegan without any animal products and processed sugars. 💚
For a plantbased version you could easily leave out the egg white and to make it healthy on top, substitute the sugar with some raw dates or frozen banana. This also makes the consistency much creamier 😉
