Letters4Myself: Carrot Cake Recipe

Greetings, travelers!

I've been studying programming again and taking some online quizzes to get myself back on the role of Mathematician through coding actively and through new perspectives.

That has led me to fill a lot my routine and time, and unfortunately it's making me nervous to also create and write as a hobby here. So yeah, I'll start writing Letters4Myself in order to aid me in not pressuring me that much about what I produce :)

And to kick it off, nothing better than to remember this love gesture I made for my partner last Friday, when I baked this carrot cake of the photo bellow with chocolate topping! I always end up saving my recipes in different places, so the steem blockchain seems like a great spot to save it, doesn't it?

Ingredients and Making It

Takes aproximadetely 1 and 1/2 hour to prepare it

  • 2 cups (280g) of carrots without skin cut irregularly;
  • 3 eggs;
  • 1 and 1/3 cup (225g) of sugar;
  • 150ml of vegetable cooking oil, like sunflower oil;
  • 1 and 1/2 teaspoon of baking powder;
  • freshly grated orange zest;
  • a bit of salt;
  • a bit of vanilla extract;

Mix all of the above, and after it turns into a homogeneous cream, add:

  • 2 and 1/3 cups of wheat flour;
  • a bit of cocoa powder.

Baked in a pre-heated oven at 170°C for about 45 minutes, in a buttered tray.

Cheers while you wait!

For the chocolate topping:

  • 1/3 cup of water;
  • 1/3 cup of sugar;
  • 1/2 cup of chocolate powder;
  • 1 tablespoon of butter.

Put it all in a pan over medium-high heat for around 5 minutes for the sugar to melt, mixing to not let it burn. Let it rest for around 3 minutes to not be that hot, and drip it over the cake when ready.
