Have you ever tried a lentil salad? If you like legumes, this lentil and goat cheese salad is going to be great for you. We all know how necessary it is to eat vegetables several times a week. In hot periods, although I eat lentils all year round, maybe I don't feel so much like eating a lentil stew but... what about preparing the lentils in a nice cold salad instead?
If you try this lentil and goat cheese salad you'll see that it's really good and combines perfectly with other vegetables, such as peppers, carrots or onions and an irresistible touch of goat cheese. It has many nutritional values.
Lentils, whether fresh or jarred are great. I used jarred lentils here as it reduced the preparation time. Also, feta cheese is a great alternative to goat cheese though it is a little saltier, so if using feta instead, then use less.

Serves: 2
Ingredients:
100g lentils
1 garlic clove, crushed
½ lemon, juice only
2 tbsp extra virgin olive oil
15g fresh basil leaves
a few leaves of fresh parsley, if desired
75g goat cheese or 50g feta cheese
salt and freshly ground black pepper
Instructions:
Gently fry the garlic in a pan until softened.
Drain the lentils and place in a bowl. Stir in a squeeze of lemon juice, the oil and three-quarters of the basil, then season.
Crumble over the goat cheese and scatter over the rest of the basil.
