Wonderfully clear and complete instructions. I used to have sourdough starter and made bread often when my family was still home but now that I'm just cooking for myself it hardly seems worth the effort to make bread.

Ohhh! but making bread by hand is such a great meditation. Something about the kneading helps me clear my mind and process stuff.
Bake a double loaf batch. Eat one now and put the other in the freezer. Sourdough has a long shelf life so if you make sourdough you have fresh bread for a couple weeks. Toast, croutons and french toast are great to make from stale bread...and bread pudding.
