We bought fresh fish from the fishermen again and this time it's a huge one called Dorado, some people even call it dolphinfish. I was not able to take a picture of the whole fish because the fishermen already had it sliced. When we went home we placed in the freezer because we were still deciding what to do with it.
Late this afternoon the air was getting colder and we agreed to have soup. We decided to cook Tinolang Isda or fish in ginger broth. Tinola is the dish, and the word "isda," means fish. Tinola is a common Filipino dish cooked at every home here in the country. It is as common as fried chicken. Its main ingredient is water, fish, onion, salt, ginger, lemongrass, and any leafy vegetables that goes best with soups like pepper leaves. In our recipe tonight, what we used are sweet potato leaves. You can also add slices of unripe papaya. There are a lot a versions of tinola but that's basically it, water, fish, salt, ginger, onions and lemon grass. You just clean the fish well. Boil the water and add the spices and salt then drop the fish. Let it simmer for 5 minutes and add the vegetables before you turn off the heat.
