pancakes are always going to be a good idea 😏🥞 serve them up for breakfast this weekend!⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
🙆🏻‍♀️ I topped mine with hemp seeds, almond butter and chia jam (1/2 cup berries, 1 tbsp chia seeds, 1 tbsp water cooked on the stove until thick - more instructions on my feed)! Here’s the recipe:⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
❀ 1/4 cup almond meal⠀
❀ 1/2 cup flour (I used teff, you can use any)⠀
❀ 1/2 tsp baking powder⠀
❀ Pinch of salt⠀
❀ 1 egg⠀
❀ 1/4 cup milk and
❀ Extra virgin olive oil or coconut oil, for cooking⠀
if you want you can add cacao power in mix

⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Mix dry ingredients together. Add wet ingredients and mix until just combined.⠀
2️⃣ Heat oil in frying pan to medium heat. Add spoonfuls of batter and flip pancakes when bubbles on top start to pop.⠀
3️⃣ Remove from pan when golden brown on both sides and add toppings! Enjoy! 🥰⠀

It’s the weekend and I’m excited to head out and get some sunshine today! Contemplating going to the beach even though it’s still a bit cold... wish me luck! 🥶😂 My favourite thing about the Gold Coast will always be the amazing beaches 😍🏝⠀
