If a dessert is as sinful as this one, there is only one solution: make it even more sinful!

Did I mention that it's healthy too?

I used my magic skills in the kitchen to create this version without any animal products, and it's gluten-free, too. Try it to believe it... not only at Carnival!

The recipe of LE CASTAGNOLE is certainly very old: a manuscript volume of the eighteenth century was found in the archives of the state of Viterbo in which there are four recipes of castagnole, one of them is baked. Proving, therefore, that it was not adopted recently in order to make the dessert lighter, as is often believed.

๐ŸŽŠ๐ŸŽŠ๐ŸŽŠ๐ŸŽŠ๐ŸŽŠ๐ŸŽŠ๐ŸŽŠ

Ingredients

225 grams of chickpea flour
225 grams of rice flour
150 grams of cane sugar
two tablespoons of potato starch
1 package yeast
1/2 cup of rum
rice milk as much as needed (or another type of milk)
grated rind of one lemon
oil for frying enough to completely immerse the small balls (I used sunflower oil)

Instructions

  1. In a large bowl combine all the dry ingredients gradually adding the milk and the rest of the ingredients except for the oil.
  2. Mix with your hands until it reaches the right consistency and make a sphere of dough.
  3. Form many small balls.
  4. Pour the oil in a deep pan and heat it over medium heat until it reaches the right temperature. (to understand when it's is ready, throw in a little small piece of dough)
  5. Based on the capacity of the pot pour in a few balls at a time.
  6. Fry until the balls are golden. Then drain them on a plate with paper towels.
  7. Finally sprinkle everything with powdered sugar.
