Egg free mayo ready in 2 minutes

Do you ever buy vegan mayo at the grocery store? It's a rip-off! It's near 9 CAD$ for a pot. At this price I was excepting a lot of fancy ingredients...Not at all. Four or five everyday ingredients and a bunch of preservatives. So I came out with this super easy recipe. It costs about 60 CAD cents for a pot and it takes about 2 minutes to make. 


Ingredients

1/2 cup soy milk

1 cup vegetal oil ( don't use a strong oil like olive oil because it will taste like shit)

1 tbsp lemon juice (please use fresh and not the horrible concentrated one)

1 tbsp apple cider vinegar

1/2 tsp salt

1/2 tsp grounded mustard


Instructions

1. In a high cylindrical recipient, put the soy milk, the lemon juice and the mustard powder. 

2. Put your foot blender into the recipient and start it. Add slowly the oil to create an emulsion. It's supposed to thicken rapidly. 

3. Add the salt and rectify the seasonings to taste.
