HEALTHY CHICKEN BURGER RECIPES
1- CRISPY CHICKEN BURGER
INGREDIENTS
125 g plain flour
freshly ground pepper to taste
1 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon fried thyme (optional)
1/2 teaspoon salt
2 skinless chicken breast fillets
125 ml buttermilk
oil for deep frying
FOR CREAMED CORN RELISH:
80g frozen sweetcorn kernels
salt and pepper to taste
1 tablespoon mayonnaise
To serve
2 sesame seed burger buns
1/2 onion, sliced
lettuce
4 cheese slices
BBQ sauce
METHOD:
Take a large food safe plastic zip seal bag and add all the dry ingredients for the chicken. Shake well.
Dredge the chicken in buttermilk for 30 minutes then place in the bag. Repeat with the other chicken breast. Shake the bag well to coat the chicken.
Place the chicken onto a plate or tray lined with greaseproof paper and allow to rest for 30 minutes before frying.
Heat a deep fryer or wok with vegetable oil until very hot. Add the chicken and deep fry until cooked through. This will depend on the size and thickness of the chicken, but a medium sized breast will take around 10 minutes. Once chicken patties thoroughly cooked through, remove from oil and drain on kitchen paper.
Meanwhile, make the creamed corn relish. Place the frozen sweetcorn into a microwave safe bowl, cover with water and microwave for 5 minutes. Drain, cool for 5 minutes, then add the mayonnaise and seasoning. Using a hand blender, roughly puree the relish. Set aside.
Toast the buns. Place chicken fillets on the bottom buns, then top with the corn relish and remaining ingredients.
2- ROSEMARY CHICKEN BURGER
INGREDIENTS
235 grams mayonnaise
20 grams chopped fresh rosemary leaves
1 clove garlic minced
450 grams ground chicken
½ teaspoon salt
¼ teaspoon freshly ground black pepper
4 sandwich rolls or buns
4 tablespoons olive oil
20 grams rocket divided
Method:
For the mayonnaise: In a small bowl mix together mayonnaise garlic and rosemary set aside.
For the burgers: Preheat a griddle pan over medium-high heat. In a large bowl add the ground chicken 1/2 tsp salt 1/4 tsp pepper and 1/2 of the mayonnaise mixture. Using clean hands gently combine the ingredients and form the chicken mixture into 4 patties. Place the burgers on the barbecue and cook for about 7 minutes on each side. Transfer to paper towels and let rest for a few minutes.
Brush the cut side of each bun with the olive oil and 1 tsp of the mayonnaise mixture. Broil for 1 to 2 minutes until slightly golden.
To assemble the burgers: Spread a dollop of the remaining mayonnaise mixture on the tops and bottoms of the toasted buns. Place the chicken burgers on the bottom halves of the buns. Top each with a handful of rocket and finish with the top half of the bun.
3- ZINGER BURGER
INGREDIENTS
Chicken 1/2 kg fillet (breast boneless piece)
Black pepper 1 tsp
Mustard powder 1 tsp
Salt 1 tsp
Worcestershire sauce 2 tbsp
Oil for fry
MARINATE ALL SPICES ELSE OIL FOR 24 HOURS.
FOR BATTER:
Flour 2 tsp
Baking powder 1/4 tsp
Cornflour 2 tbsp
Egg 1
Rice flour 2 tbsp
Chilled water as required
Salt 1/2 tsp
MIX ALL TOGETHER AND MAKE THE THICK BETTER.
FOR COATING:
Corn flakes 1 cup
Breadcrumbs 1 cup
Chips 1 cup
MIX ALL SPICES & SLIGHTLY GRIND(not in powdered form)
Bun, cheese slice, lettuce, mayonnaise
Cooking Directions:
Dip marinated chicken in batter then coat in prepared coating and deep fry till chicken burger patties become golden.
Cut bun, spread mayonnaise on both pieces
Put lettuce, Chicken and cheese slice
Serve hot with chili sauce, ketchup and coleslaw
These recipes are very easy to cook. Just try it and enjoy your meal.
