These super delicious pork chops are browned in butter and olive oil, then simmered until done in a wonderful mushroom and leek sauce. I love that this recipe is simple and doesn't require much prep, though it tastes incredible. Hope you all enjoy this!
- Ingredients
1 1/2 pound pork tenderloin (sliced into rounds)
1 cup leeks (chopped)
3 cloves garlic (minced)
10 ounces mushrooms (cut into quarters)
3/4 cup chicken broth
1 cup heavy cream
1/2 tablespoon flour
2 tablespoons olive oil
1 tablespoon butter
1/2 teaspoon parsley
1 teaspoon dill (I used dry)

- Instructions
- In a pan, heat butter and 1/2 olive oil. Season sliced pork with salt and pepper, and cook, turning once, until browned on both sides, about 8 minutes total. Transfer to a plate.
- Return the pan to medium-high heat, add the remaining olive oil. Add leeks, mushrooms and garlic, saute for 8 minutes (stirring often).
- Sprinkle with flour. Stir in broth and heavy cream. Add dill, parsley, salt and pepper to taste.
- Return the pork chops and any juices from the plate to the pan. Spoon the mushroom and leek mixture over the chops, cover with a lid, and simmer until the chops are tender, about 8 minutes.
- Serve pork topped with the creamy mushroom leek sauce.
