My Simple to make #3 : Fish Stew with Rice For dinner πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹

My community in Kenya has never been known for fish. A fact most of them hate fish. Ask them why they will say it is the smell. Well, that would be true, growing up the only fish we had access to was that which came from the lakes in Western Kenya or coast of Kenya. Those days Farming Fish was unheard of.

Now, we have different groups advocating for fish farming in our vast pieces of land. My cousin is one fish farmer who has been very successful in that business for the past two years. Now with access to fresh fish we have started to see a mindset change over the time.

I had fish for the first time as a grown up. I cannot remember the age but, we can go with something past 15 years. All that preaching about fish smell never leaving your hands and clothes. Plus the smell from the fish market had kept me away. That first bite though: THANK YOU MAMA OTI. That was all I needed. I was hooked. I spoke about that meal for a long time. The only disadvantage was, while I knew how to prepare several meals, I had no clue how to make fish.

Fast forward several years down the line and I have developed a good recipe for fish stew. I have experimented with several recipes with fish as the star of the meal. Between us, I have nailed the stew. Today I am sharing the simple recipe, feel free to tweak it to serve your taste. Enjoy

Ingredients

Serves three

  1. 1 whole fish ( Bought at the market freshly deep fried and cut into three pieces)
  2. Four large tomatoes ( you can substitute with a 400gms of canned tomatoes)
  3. Parsley or Coriander Fresh
  4. Salt To taste
  5. Lemon/ vinegar (wine vinegar)
  6. Quarter cup Plain yogurt
  7. Large onion
  8. Cooking oil

The Method

Preparation of the ingredients

This doesn't have to be in this order. Also you can do all these as you cook if you are fast.

  1. Dice the onion
  2. Blend the tomatoes
  3. Cut the herbs Parsley or Dania

Cooking

  1. Heat oil in a cooking pot
  2. Add onions and cook till golden brown. Ensure you stir so they cook evenly.
  3. Add the blended tomatoes. wait for them to boil.
  4. Add Yogurt and salt to taste.
  5. Cook the mix for three minutes, and add the pieces of fish. Ensure you cover them with the sauce .
  6. Reduce the heat and cook for 10 mins
  7. Drizzle lemon juice generously and turn off the heat

Serving

I prefer to serve it hot. on top of rice. Drizzling the stew on the rice and topping it with the herbs as garnish. πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹πŸ˜‹

Remember to remove all the bones as you eat.

That looks amazing! I have little experience cooking fish. It intimidates me, but this recipe makes me want to give it a try. The fish are deep-fried first?

Yes. The fish is deep fried first. We have deep fried fish directly from the market here in Kenya. Thank you for stopping by.
