Dear friends of steemit, I was at home today and it seems to me that I prepare some cachapas de maiz, taking advantage of the corn season.
The cachapa is part of the typical dishes of Venezuela, I tell you that it is more or less like a pancake but instead of using wheat flour, tender corn is used. Imagine there are even those who prepare them with canned corn.
These are the ingredients:
4 cups of tender corn (about 12 ears or jojotos).
3 teaspoons of salt
¾ cup of sugar (or paper, if you like).
1 cup of milk
The first thing to do is peel and shear the jojotos until you get about 4 cups of corn.
Then you have to grind it or liquefy it, once you get the dough you have to mix it with the salt and the sweet ingredient: sugar or papelon; later milk is added. You will get a liquid mixture but a little thick.
To start the cooking of the cachapa it is recommended to use the banana leaf. Just as the pancakes are cooked in a budare or pan, then place the banana leaf on top and then, with the help of a soup spoon, add a portion of the dough to create that peculiar circular shape of the cachapas.
Let it cook for a while until both sides are browned with that special gold that we all love, remove them from the fire and go.
If we want to enjoy it even more, we add a bit of butter to it and place the cheese. It is an exceptional and delicious silver.
