The Search for the Best Pho

My city has a rather large Vietnamese population and my friend and I have made it a game to find the best tasting pho in town. My friend and I have tried at least 25 different restaurants in the area and we produced a simple list to rate quickly.
The characteristics of a good bowl of pho are rather simple.

  1. Beef is slightly under cooked so it can cook in the broth while eating
  2. Noddles must not be bunched up in a ball
  3. Bean sprouts, basil, and limes are free
  4. Tripe exists (the crunchy white prickly noodle thing, don't look it up before trying it. Trust Me!)
  5. The restaurant can produce a good bowl of pho every time
  6. The most important characteristic is the broth must NOT be watery

Yea, I like to add Sriracha and Hosin sauce but too much hosin will ruin the broth

Never been huge on soup though this looks great!
