Quinoa Masala Salad

Ingredients

3/4 Cup Quinoa
Red Bell Pepper – 1
Yellow Capsicum-1
Orange Capsicum-1
Carrots – 2
Corn-1/2 cup
Walnuts-1/4 cup
Cranberries – 2 tbs
Green chillies – 5
Pepper powder – 1/2 tsp
Pav Bhaji Masala – 1/2 tsp
Salt as needed
Oil
Cumin – 1/4 tsp

Process

Cook Quinoa as per cooking instructions. (Quinoa: water = 1:1 ratio).
Once cooked and cooled down, fluff it with a fork.
In a pan, add oil. Once the oil is heated add cumin, green chillies, walnuts, cranberries. Saute for 2 minutes.
Add carrots, corn and bell peppers.
Saute for 6-7 minutes after adding salt as needed.
Add pepper powder and pav bhaji masala
Once the veggies are cooked, add cooked quinoa, turn off the stove and close the lid for 5 minutes.
