This is how i cook "Pork Binagoongan" (Pork Sauteed in Tomato and Stewed in Shrimp Paste)

This authentic Filipino recipe is very easy to cook because it only have few ingredients. The trick to this very simple dish is how will you cook the pork to be fairly tender and tasty avoiding the salty taste of bagoong (shrimp paste).

Cooking time:

Preparation: 10mins
Cooking: 48 mins.
Total cooking time: 58 mins. to 1 hr.
Serves 2 persons.

Ingredients:

  • 1 lb pork, cubed or cut in 2x1"
  • 3 cloves of minced garlic
  • 2 tbsp. vinegar
  • 1 teaspoon sugar
  • 1 medium-sized onion, chopped
  • 1 medium-sized tomato, sliced
  • 2 long chili peppers, sliced (you can also use Jalapeno)
  • 2-3 pcs dried bay leaves
  • 1 tbsp black pepper (peppercorn)
  • 2 cups of water
  • 1 or 2 pcs eggplant, cut narrow-lengthwise
  • 3 tbsp bagoong (shrimp paste)
  • Cooking oil
  • Salt (if necessary)

Procedure:

  1. On a cooking pot with medium heat, pour in the water, pork, vinegar, and bay leaves. Bring it to boil.
  2. Simmer it for at least 30 minutes until the pork gets tender.
  3. When the pork gets tender, drain the water, dispose the bay leaves and set aside the meat.
  4. Get a separate frying pan to saute, pour in the cooking oil and set it to low heat
  5. Saute the garlic, onion, and the tomato
  6. Add the shrimp paste, simmer it for at least 5 minutes.
  7. Once the shrimp paste is fully cooked, add the pork and the eggplant, simmer it and cook for 10 minutes
  8. Add the long chili peppers for garnish and cook it for at least 3 minutes.
  9. You can now serve it with a plain rice.
