LONCHES - A SPECIAL MEAL FOR MAMA-PEPPER TO CELEBRATE OUR NEW BABY - Recipe Included

in food •  8 years ago  (edited)

This is one of the most interesting and delicious sandwiches that we know.

Since @mama-pepper was born down near the US/Mexico border, we still have a lot of family in that area. Often, we would drive from Wisconsin to south Texas every year to visit relatives. Since we were so close to the border, we would frequently go to Mexico, even if it was just for lunch.

One of our favorite foods to purchase from the street vendors was a little sandwich/taco combination known as "lonches." Since lonchar means "to have lunch" in Spanish, lonches automatically are predestined to make an excellent option for lunch. There has seriously been times when we have went to Mexico, just to get some lonches for lunch.

The ones that we make ourselves are never quite as good as the ones near the border, but we still try and we enjoy them anyway. Since @mama-pepper has recently been through so much with the delivery of our most recent child, I figured that helping out more with meals wasn't enough, so I went for the gold and made her lonches.

INGREDIENTS

Since we feed a small army of peppers every day and since these lonches are so tasty that we eat at least a few for each adult, I make a good sized batch. Here are the basics.

  • 12 Bolillos (this is the bread)

  • 4 Avocados

  • 1/4 Head of Cabbage

  • 1/2 Bunch of Cilantro

  • 1# of Ground Beef

Recipes and options vary, but this is basically how we like to make ours.

DIRECTIONS

Brown the Ground Beef in a skillet. While the Beef is browning, heat up some oil in another skillet and lightly fry the Bolillos.

While the Bolillos are frying and the Ground Beef is cooking, slice the Avocados, Cabbage, and Cilantro.

Two options exist for slicing the bread. Either you can just make a slice down the center of the roll to stuff the ingredients into or you can cut a wedge into the top of the Bolillo. This time I opted for the wedge.

Fill the Bolillos with the cooked Ground Beef.

Add some chopped Cilantro and Cabbage.

Top with Avocado slices.

If you have a favorite salsa, you can also add that to the top.

We like to use a nice Salsa Verde on ours.

As an added bonus...

Seven months back I finally released my secret GREEN GHOST SALSA Recipe on steemit. I had kept the recipe secret for years, but I figured it was time to share it with the world. Since many of you missed that, I'll link it here for you. It complements the lonches very nicely.

https://steemit.com/food/@papa-pepper/finally-papa-s-secret-recipe-green-ghost-salsa-released-for-the-first-time-ever-on-steemit

Since @mama-pepper had no idea what I was up to (sometimes she doesn't, lol) she was very pleasantly surprised when she found out what we were eating. Soon, I may have to take her back to Mexico so that we can get some "real one," but for now, this will hold us over.

Have any of you ever tried lonches before? If not, would you like to?

As always, I'm @papa-pepper and here's the proof:

Its 8:45 am on the west coast and now I'm hungry for lunch already. Daaaang, looks delishioso sir!
My personal fav mex is Alhambre: grilled steak, bacon, and chorizo sautéed with pineapple and peppers. Taco King in the sleepy little hamlet (pun intended) of San Luis Obispo Ca. makes the best I've found yet but I'll never stop looking! Tacos for life!
That's right Taco King, that's a shout out yo!

That sounds great! Big fan of chorizo... and PEPPPERS!

nice....rs and upvote for you

Yum! Sounds really good right about now. Thank you for the recipe and the lonches story.
I visit Mexico quite often and enter in the Baja State. The popular foods in this area of Mexico are fish tacos and bbq chicken.

Gotta love the Mexican food actually from Mexico!

I do love the real Mexican food. I have a couple of good friends with restaurants in Algodones, Baja, absolute killer cuisine. Looks you got a yummy handle on it right there in your own kitchen @papa-pepper :-)

With that green ghost salsa, oh boy, I am drooling!

Lovely pics!

Yummy!

It tastes sooooo good that way!

I was thinking how so may people don't give their children healthy options for food. looks like we need to learn from the pepper ;)
Best,
Isaac

When we aren't cooking for them, we just turn them loose on the yard and let them forage for wild edibles. (LOL)

Sounds like your children are having a great childhood!

One time on a camping trip near Yosemite we made a blackberry cobbler with berries we picked on the shore of the lake next to the campsite of Bass Lake. How does life get any better than that when camping.

WOW! That sounds wonderful. I was thinking of doing a foraging post where I teach my oldest daughter about some of the wild edibles.

I wonder how hot that salsa is...

Also, I did my STEEM-Pocalypse participant payouts, you should have gotten something in your wallet!

Nice post

Thank you very much @alanw! I am glad that you enjoyed it!

If it's got Cilantro, I'm in. Avocado just makes it that much better!

Yeah, those are two of my favorites!

Im drooling right now papa. Give me some! haha. Thanks for sharing 😊

Careful, you can short circuit a keyboard drooling like that!

Yes please @ papa-pepper.

I would simply recommend that when linking youtube videos that are not original content, you add something to it. Share a paragraph or two about why you are sharing it and why you like it. Something like that, just to add more of your own original thoughts into the post. I'll keep an eye on you and see what else I might mention.

Hi papa-pepper, It not very often in life that you meet people that are willing to help others. I can't put into words how much it means to me to have your help and advise. I wish you and the family an eternity of excellent health, wealth and happiness. Thank you

I would love to try eating that lonches soon. Thanks for sharing your recipe😄 I might wanna try that recipe at home to feed my movie buddies at home

Oh! I just learned that you got the last baby (I was away for a couple of months)! Then congratulations! And enjoy the meal ^^

I was wondering what happened to you. I thought that maybe you got sick of the same old, same old from Papa...

That's the boy! Child 5 for us! So blessed!

Beautiful new little pepper A family of 7 people now! That's so cool :)

I was actually away because of my work which was really really demanding during those last months. spent a crazy time and didn't have any free moment to spend on Steemit. I will write a little bit about it in my next post (hopefully tonight if I can finish it... I am still not capable to write short posts :p)

I will have to try these as Mexican food is one of my favorites!.

One of our favorites too! Sooooo tasty @team101!

Very helpful to my writing @papa-pepper.

Sounds good.

Very helpful to my writing @papa-pepper.

nice one chef :)

Thanks @umangkochar1996. I suppose you must know how to make some tasty ones yourself!

Now I know what to have for lunch! Thanks @papa-pepper ! One question, do you season the hamburger meat mexican style or just salt and pepper?

Now that's how to present a recipe :)

I'm glad that you think so. With the amazing food photo shoots by @gringalicious coming out every day, I kind of think that mine are somewhat lacking. Thanks @graviton!

Wow.... fantastic recipe to go with the Avocado. And congratulations on your new baby!!

Thanks so much! We love the avacado too!

that looks so gooood, what a nice surprise for Mama Pepper.
You are definitely a multi talented man.

She was very happy and surprised!

a bit of a nice surprise in the marriage is good, it keeps it going, in our case, coming up to 55 years.
keep it up.

55?!?!?!

We are going on 10... I guess if you two keep it up we won't catch up!

I am too old to retrain another wife, I have got used to being told what to do now by this boss, I don't need another one. lol
5 in 10, you are producing well, but don't wear out the boss too much.
Keep the surprises in there, she deserves it.

nom nom nom, will have to try this with my own little twist!

Twist it!

This is looks delicious. I'm on diet :-( but I will try to make it someday!

Have a beautiful week my dear friend@papa-pepper

I think that it may be more of a border town tradition to feed the gringos, but I am not sure.
