Super Pork Pie with Super Keto pastry...

So, I've been making pork pies for fun and family for a while. Recently we've been experimenting with non wheat pastry and I'd like to share my ideas with you. The following ingredients will make 4 medium pies of a very tasty nature.

I normally hand cut the meat but this time I only did about half of it, the rest was processed. The pastry is tricky to handle but with the tips you'll be able to do it...

Here's the ingredients:

pork belly 1000g
smoked lardons 400g
white onion 250g
anchovy sauce 2 Tbsp
sage 6 tsp
thyme 2tsp
tarragon 3 tsp
oregano 2 tsp
nutmeg 3/4 ground
black pepper 1 tsp
white pepper 1tsp
mace 2 tsp
5 spice 2 tsp
clove powder 2 tsp
allspice 1 tsp
star anise powder 1 tsp
sea salt 2 tsp

last time I also added:
ground cardamom 1 tsp
hot paprika 1/2 tsp
crushed chillies 1 tsp

FOR THE PASTRY:
almond flour 200g
chestnut flour 200g
arrowroot flour 125g
2 eggs
lard 150g
a little warm water

JELLY:
You can use pig's feet - simmer for an hour or two with onion and carrot or you can use good chicken stock with 5 sheets of gelatine if you wish. You need about 500ml.

Here's how to roll out the pastry for the bottom of the pie tin on baking paper cut to the right size and insert it. Its impossible to pick up this kind of pastry if you don't roll it between baking paper:

Now for the sides. I measured out the correct size of baking paper to fit round the tin then cut rectangles. Squeeze pastry and roll...

Fitting the sides:

Now fill the baking tins:

You must ensure that there will be no gaps or little holes between the base and the sides otherwise the jelly will escape ... use your fingers to press and join...Put a lid on to finish. Make a fancy top and brush with egg then bake:

25 mins at 200 C
55 mins at 160 C

Let them cool down for a couple of hours then make a little hole in the top and another in the side so a small funnel can be used to add the liquid jelly. Use 5 sheets of gelatine as it says on the packet for 500 ml of stock.

Wonderful filling and pastry...you'd never guess it wasn't wheat-based.

Don't eat too much at once if you can resist. 1/6th with a big green salad plus lovely dressing is enough if you don't want to shoot out of nutritional ketosis. Otherwise, have a feast. Kimchi, sauerkraut, English mustard, pickled onions or piccalilli are great too. This was xmas feast food...ENJOY.

We're a 'soft' society these days, no backbone for a bit of effort.
Still, these will be the ones that suffer if status quo changes.
