House made Tortillas? There is a place in San Diego called Old Town Mexican Cafe. As you approached the restaurant, you could watch them make the tortillas in the window. So good.

I am a huge red onion over white onion fan both when I create and cook my recipes and eating as well.

I tend towards the sweet or Vidalia onions these days but red onion is definitely great when raw.

I'm loving your twin cities taco tour! You should hit the West Side of St. Paul, tons of Tacqueria's.
On a side note, since you have been here for what seems like a longer time period than most. Is it possible to get something like #twincities as a trending topic? I'm not really sure how that works but I have many friends in the Twin Cities that I am trying to turn onto Steemit.

I guess cochinita is a suckling pig, basically pork veal minus the inhumane cages? I didn't know this until reading the Wikipedia article.

Honestly sometimes I like the dry shredded meat in tacos like that. Especially if there's little crispy bits because they warmed it up on a flat grill. But I don't think the chochinita is really supposed to be that dry.

Did you get a habanero sauce/salsa along with it? I feel like that's one of the key ingredients too. One of the reasons I had a hard time remembering if it was supposed to be dry/wet was because I always end up drowning it in gooey awesomeness.
