Healthy Breakfast Challenge: Creamy Vanilla Milk Rice

Perfect quick and appetizing plantbased breakfast.

I always have some cooked brown rice stored in my fridge, so I can use it anytime I want without spending time with cooking it all the time because it takes quite long.

This morning, I just put 1 cup of the cooked brown rice in a pot, and put 1/2 cup soy milk, 1/4 tsp vanilla extract and 2 tsp agave to it. I cooked it for 3-4 minutes until it became creamy, then added a small handful of raisins and 1 cup of chopped pineapple.

That's all! Very simple, yet healthy and delicious :) Enjoy!

Looks very tasty. Good plan to always have some cooked rice so you can use it instantly. Could you put cooked rice in the freezer? I will try this for breakfast but will add some seeds or nuts and maybe some apple.

I liked it a lot like a rice pudding we prepared here in Venezuela and the vanilla gives it such a rich touch
