It is a global day celebrating women rights and achievements. In Russia it is an official public holiday, big day for women, men have no choice but pay a lot more attention to women that day or they definitely get into trouble. We buy chocolate, perfume, kitchen utensils, anything!! Not mention the flower sellers who make a killing on that day! We appreciate our women for their support love and beauty! So today I decided to make this simple nutrition-packed salad for very important woman in my life - my mother.

As an Armenian I am fond of the pomegranate which in our mythology symbolizes fertility and abundance. This fruit has many legitimate health benefits as well. Nonetheless, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that may immensely benefit health.
Sweet potatoes are nutritious, high in fiber, very filling and have a delicious sweet taste. For this salad I cubed them and baked in oven 350 F until soft. Takes about 45-60 minutes.

This recipe calls you to make your own proportions. A perfect salad has to be balanced. No flavor should dominate.
