I quite like recipe number 2.

Just 3 weeks ago, I tried quinoa for the first time. I have added too much water when cooking the quinoa, which resulted in a very sticky texture :(

The second time, I used less water and added a bit of salt together with a bit of olive oil. It turned out well. It was fluffy and slightly nutty in taste :)
