Just about the easiest way to impress using a side!
This salad takes minutes, and will really impress people - ideal for the holiday season.
It is made up of ingredients which I can almost guarantee you have in your kitchen!
You'll need;
- 2 Bell Peppers, Thinly Sliced
- 1 Large Red Onion, Sliced
- 2 Tablespoons of Toasted Sesame Oil
- A Thumb Size Piece of Ginger, Finely Sliced
- 2 Tablespoons of Thai Style Chilli Sauce
- 1 Cup of Couscous
- 2 Cups of Vegetable Stock
What you'll need to do;
- Fry the Red Onion and Bell Peppers in the Sesame Oil until nicely caramelized
- Add the Couscous and quickly stir for about 20 to 30 seconds
- Add the Vegetable Stock and continue to stir
- Once the Couscous has soaked in all the liquid, turn off the heat
- Add the Ginger and Thai Chilli Sauce and stir once again
Use this as a side for any meal! By stirring the Couscous in the pan for a little bit before adding the stock, it soaks in the nutty flavor from the oil and the fried off vegetables adding depth to the flavor of the dish. If you have some Lemongrass, it can also be a great addition!
