Spring Rolls with vinegar dip

Hi Steemians

I have leftover stir fry vegetables from my lunch today more than enough for single serving. I don't think I would eat just the way it is and thought I would turn this into spring rolls for my late afternoon snack

You can add almost any vegetable you like for a deep fried spring roll like in my leftover dish I have carrots, cabbage, green beans, bean sprouts, onion and slices of tofu.

I used the remaining wrappers from my previous turon snack (banana sweet treat) to roll the leftover veggies.

Then fried them under medium high heat until golden brown. Let them cool while preparing the vinegar dip. Mine is simple, I chopped lots of garlic added them to vinegar salt and pepper. You may add shredded carrots or onions if you want it to be a bit sweet.

I was satisfied and full so delicious. We call spring rolls here in the Philippines as lumpia you can have your own take depending on your taste and available ingredients. Lumpia is a popular favorite.
