Sunday Breakfast: Chia Pudding with Mango & Banana

Super Charging my Sunday with Super Breakfast! 

If you are not a morning person like me or too lazy to make a full fledged English breakfast on a Sunday morning, then this divine breakfast is just for you! Chia seeds are pretty incredible – they are rich in iron, calcium, potassium and omega-3 acids. And team this with tropical mango & yummy banana ...it's not only delish but also gets you going throughout the day like a charm!  

Now if you have never tried your hand on overnight oats or Chia then I definitely recommend that you do. They are super easy & THE best on-the-go option for a busy lifestyle. 

My version of Chia pudding is very simple - I use about 5 ingredients, mainly ofcourse Chia seeds, almond milk with few slices of ripe banana & mango. You can then top it up with some dry fruits like Cranberries & pumpkin seeds for the extra flavour. If you prefer a sweeter version of this then you could add honey too.

Recipe

  • Chia Seeds - 3 tablespoons
  • Almond Milk - 1 cup
  • 2 tbsp Honey (optional) 
  • 1 fresh mango, peeled and chopped
  • 1 ripe banana, peeled and sliced
  • dry fruits & seeds optional

Method

  1. Mix the chia seeds & almond milk in a bowl and add the honey. Give a good stir before covering it with a lid or cling film and refrigerating it. After 15 mins, stir it again and leave it overnight in the fridge. (or for a minimum of 2 hours)
  2. Remove atleast 15 mins before serving, layer the bowl with chopped mango, chia seeds and banana. Top it of with dry fruits & seeds.

(Optional - could add some grated coconut as a topping or even substitute almond milk with coconut milk!)
