...It's EASY as HELL! I've burned ramen noodles before, and once almost set my apartment on fire because I left a Pop-Tart in the microwave too long. So trust me when I say this recipe is quick, painless and tastes amazing.

Linguine with Tomato, Basil and Brie Cheese
Makes 4 Servings
Prep Time: ~5-10 minutes
Cook time: ~10-15 minutes
8 oz linguine (the fresh stuff from an Italian market takes it to a whole new level)
1 cup brie cheese, sliced
1 cup tomatoes, chopped
1/2 cup fresh basil, shredded
1/2 cup extra virgin olive oil
salt and pepper, to taste
Boil linguine for 10-15 minutes, or until at desired firmness. Strain and place into a large mixing bowl.
While the pasta is still hot, add the brie cheese, chopped tomatoes, shredded basil, olive oil, salt and pepper. Mix everything together until the cheese has melted and all the ingredients are evenly combined. Garnish with basil and drizzle with olive oil, if desired.
Serve warm, room-temperature or chilled.
Pairs well with Chenin Blanc, Viognier, Sauvignon Blanc and Chardonnay/Chablis.
There's the basic recipe. It's ridiculously simple, and also pretty flexible as far as ingredients and leaves lots of room for experimentation - in the past, I've added crushed red pepper, proscuitto, chicken or balsamic vinegar. Modify it to your tastes, and what you've got to work with. It will still be delicious.
