Chocoflan or Impossible Cake is a very popular dessert in Mexico.Is magically delicious and is not so hard to make as you think.🙂

Ingredients
For chocolate cake:
-120gr Butter at Room temperature.
-1 Cup of sugar,
-2 Eggs at room temperature.
-1 3/4 Cup of flour.
-3/4 tsp. Baking powder.
-3/4 tsp. Baking soda.
-1/3 Cocoa powder.
-1 Cup of milk.
-1/3 Espresso or stron coffe.
-1/4 Cup of Pecan (Finely chopped and toasted)
-1 tsp Vanilla.
For the Flan:
-100 gr. Cream Cheese or Mascarpone Cheese.
-339ml Evaporated Milk. (1 Can).
-286ml Condensed Milk (1 Can).
-5 Eggs.
-1 tsp. Vanilla.
To Cover:
-Pecan (Finely chopped and toasted)
-Caramel.
Tips:
The baking mold I use is 24 Cm.
If you add Cajeta instead of caramel, before putting the caramel put a bit of butter.
Grease all the baking mold with a little, very little bit of butter. It will help to unmold with no problems, when flip cake. Flip cake with a fast movement.
The tray where I put the baking mold with chocoflan for Bain Marie was too big. If you can, use smaller one, but higher than the one that I use. If possible higher than the baking mold with the chocoflan. Is important that water you pour to make the bain marie is at half of the baking mold with the chocoflan.
The Chocoflan cake was in Oven at Bain Marie for 2 hours at 180 C. The time will take for you will depend of your oven. It can take from 1 to 2 Hours. In my case, after 2 hours I turn off the oven and open the door of the oven until cool down and then I remove. I let to cool down at room temperature for about 2 hours and then I unmold. To check if cake is ready after 1 hour inside oven, carefully open a bit the cake and try with a toothpick, If not ready, cover again perfectly and leave more time in oven. I prefer to leave it in oven without check for 2 hours.Because I knew my oven is not powerful. But I check the water to not be consumed. If you notice the water evaporated, just ad carefully more water without removing the cake from oven.
Before serve, I take to the Refrigerator.In mi case, 12 hours. But with 4 hours in refrigerator is enough.

Para el Pan de chocolate:
-120gr de Mantequilla a temperatura ambiente.
-1 Taza de azucar.
-2 Huevos a temperatura ambiente.
-1 3/4 de taza de Harina.
-3/4 Cdta. de polvo para hornear.
-3/4 Cdta. de Bicarbonato de sodio.
-1/3 de Taza de cocoa.
-1 Taza de leche.
-1/3 Taza de Cafe.
-1/4 Taza de nueces finamente picadas y tostadas.
-1 Cdta. de Vainilla.
Para el Flan:
-100 gr. de Queso Crema o Queso Mascarpone.
-339ml de Leche evaporada. (1 Lata).
-286ml de Leche condensada (1 Lata).
-5 Huevos.
-1 Cdta. de Vainilla.
Para Cubrir:
-Nueces.
-Caramelo.
Tips:
El Molde que utilice es de 24Cm. de diámetro en forma de rosca.
Si ańades cajeta en el fondo en lugar de caramelo, antes de poner la cajeta pon un poco de mantequilla.
Engrasa todo el molde con un poquitito de mantequilla muy poquito. Te ayudara a desmoldar mejor.
El molde donde coloque el chocoflan estaba muy grande, utiliza uno mas pequeno pero si mas alto, incluso si puedes conseguir uno mas alto que el molde que contiene el chocoflan.
El Chocoflan estuvo en el horno a baĹ„o marĂa por 2 horas a 180 C. El tiempo que te lleve dependerá de tu horno puede llevarte de 1 hasta 2 horas. Pasando las dos horas deje abierto el horno apagado hasta que estuviera friĂł y retire. Lo deje enfriar completamente a temperatura ambiente por 2 horas y entonces desmolde. Puedes destapar con mucho cuidado pasando la hora y probar con un palillo, si no esta listo cubre perfectamente nuevamente sin sacar del horno. Yo preferĂ dejarlo en el horno sin destapar por las dos horas, pues mi horno no es muy potente. Pero eso si, vigile que el agua no se consumiera. Si Ves que el agua se esta consumiendo, solo aĹ„ade con cuidado sin retirar del horno.
Antes de servir lo lleve al refrigerador, en mi caso, de un dĂa para otro. Pero, con 4 horas es suficiente.
