What's Asaro Elepo rederede

This is simply cooconut yam porridge with coconut milk infused yam pottage recipe. If you like coconut then this sweet food is for you. Also to add more potent coconut taste or flavour you will need to use vegetable oil to ganish the cooking.

One important thing I love with this food is that you don't need to serve it with stew, rederede sweetness is there already. When I prepared this food I added a bit of sugar to the yam when parboiling it with the coconut milk. Is not compulsory to do that but it is tastier if you do that.

Let's do the cooking what do we need?

  • Let's use 1/2 tuber white yam, washed and chopped it into small chunks.

  • 1 cup of stock fish (dry fish)

  • Tatashe ( Red bell pepper)

  • 1can of 400ml Tin milk

  • Big onion

  • Atarodo (Scotch bonnet) 1 is okay

  • Ginger Root

  • 2 Tablespoon ground crayfish

  • 2 Knorr Chicken Cubes or anyone you prefer

  • Salt to Taste

How to prepare it

  • firstly blend the bell pepper, scotch bonnet, garlic onion and ginger until they all smooth and set them aside.

  • Positioned a fairly big pot and place on a job on medium heat, pour the Palm oil. When its hot slice small onion and leave it for 1-2minutes.

  • Add the blended pepper after 2minutes, also Knorr chicken cube and salt to taste. Fried all for 5minutes and stir occasionally to avoid burning.

  • Pour the cocomilk into the pot, then transfer yam into the coconut milk and add just a bit of salt and parboil for 7-8minutes. Dont cook till soft

  • Now check the stew and add 1 cup of stock fish then combine and leave to cook further 2-4minutes.

  • After 4minutes add the parboiled yam with the coconut milk. Add crayfish, smoked fish and taste for seasoning and adjust if it is necessary.

  • Now, turn and combine them thoroughly and reduce the heat and leave to cook for about 15minutes or till the yam is soft. After the softness of the yam, mash half of the yam or if you like mash all of the yam

  • finally switch off the heat and allow it simmer with the residual heat for 2-4minutes. Atlas our asaro elepo rederede is ready
