Ingredients
4 white bread slices
1 tablespoon Green Thai curry paste
1 teaspoon olive oil + for brushing
1 cup grated cottage cheese (paneer)
1 teaspoon soy sauce
1 teaspoon red chilli flakes
Salt to taste
½ teaspoon sugar + for sprinkling
White sesame seeds for sprinkling
Fresh coriander sprigs for garnishing
Method
- Preheat oven to 180° C.
- Heat 1 teaspoon olive oil in a non-stick pan. Add Green Thai curry paste and sauté for 2 minutes.
- Add 1 tablespoon water and mix. Add cottage cheese, soy sauce, chilli flakes and salt, mix and cook for 1 minute. Add sugar and mix well. Transfer in a bowl and cool.
- Trim the edges of each bread slice and further cut into 4 squares.
- Place the squares on a baking tray and brush some olive oil. Spread some cottage cheese mixture and again brush some olive oil on top. Sprinkle some sesame seeds and sugar on top.
- Put the tray into the preheated oven and bake for 5-10 minutes.
- Serve hot garnished with coriander sprigs.
