I have not been too good this last week withmy silly ear trouble but felt a little better today so I managed to knock up an amazing curry and I'm pretty impressed with myself. I also found another way to cook chips! Here's what I did.
Method
After pouring 1 can of coconut milk in the slow cooker I added 2 tablespoons of tikka masala spice and garlic herbs, then added 2 tablespoons of low fat spread.
I then mixed the above together and added 2 large chicken breasts, a chopped onion and half a chopped mango.
I left this to cook for 4 hours on a low heat.
Chips(about 120 calories)
I heated 2 lumps of coconut oil in a frying pad then chucked in a handful of cut chips carefully turning to cook all the way through.
Verdict
OMG loved the curry (estimated about 450 per half portion)
Chips were beautiful with the curry, but you could slightly taste the coconut so I would only make like this for curry.
