Seeing KFC and McD fried chicken, who is not curious to know how to make crispy fried chicken ...
Apparently ... the key to making this krispi-style fried chicken is the flour and the manufacturing process.
Material:
1 kg chicken, cut into 1 tsp garlic powder 1 tsp fine pepper 1/4 tsp dry chilli powder 1/2 tsp fine salt Oil for frying
Liquid Coating Material:
300 ml cold water / water 300 g high protein flour (suggestion, twin chakra cap) 40 g cornstarch 1/2 tbsp milk powder 1 egg yolk 1/2 tsp baking soda 1/2 tsp soft salt 1/2 tsp fine pepper
Dry Coating Material:
400 g high protein flour 100 g cornstarch 1/2 tsp baking soda 1 tsp powder instant broth chicken flavor 1 tsp garlic powder 1/4 fine salt (if you want a spicy chicken flavor, you can add chilli powder)
How to make:
Liquid coating: Mix flour, cornstarch, milk powder, baking powder, pepper, salt and vitamins.
Stir well.
Add egg yolks and water little by little while stirring until well blended.
Store in a refrigerator / cool place.
Dry Coating: Mix all dry coatings.
Stir well.
Set aside.
Season the chicken pieces with pepper, salt, powdered garlic and red pepper powder.
Stir well. Let stand for 15 minutes so that the spices soak.
Roll the chicken pieces into a dry coating until the entire surface is covered with flour.
Dip it in a liquid coating and roll it back into the dry coating while squeezing it in.
Do it up to 2 times if you want extra crispy chicken. Do this method until the chicken runs out.
Heat the oil, fry the chicken in a lot of oil with medium heat.
Cook until the chicken is cooked, brownish and dry. Pick up, drain.
Kentucky Fried Flour is ready to be served with sauce & chili sauce.
