Raw mango and coconut milk curry

Coconut milk and raw mango - an easy to prepare curry

Ingredients

  • coconut milk
    strong milk - one cup
    diluted milk - 2 cups

  • raw mango slices

  • sliced onions

  • red chilly powder

  • salt

  • mustard seeds, red chilly slices and coconut oil for seasoning

Method

Slice a raw mango. Slice onions. Mix onion and mango slices and mix in salt and red chilly powder. Marinate. Keep it for some time.

Switch on the stove and add the diluted milk to the mango and start heating it. Add mustard seeds and red chilly slices which have been seasoned to this mix.

Let it boil and cook till the mango slices achieve a kind of transparent color.

Then add the strong coconut milk and mix well.

Turn off the stove. The curry is done and will stay for two days without refrigeration. It does not need any other spices but you can add it if you like.

never probyvala it. and I will not try, because I do not like milk. But it looks beautiful. maybe you can replace milk than that :)

Sounds really good. I have one question though: what do you mean by strong and diluted coconut milk? I only know one kind of coconut milk 😁 thanks

I take fresh coconut, then blend it and extract the milk. This is the first milk or the strong one. Then I put the squeezed coconut again in to the blender and add water and repeat the process. the milk I get again is diluted and called the second milk. The milk that you get in stores is of course the strong, first kind but i guess a portion of it can be diluted.
