So if you read part 1 of this tale, you'll know that 2 days ago I made my first batch of lox. Ever. Tonight we decided that the thinner section (from near the tail) was "there". Instructions online vary from 2-3 days to 5-7 days... So a test was clearly in order.
As you can see... It looked pretty good. So I gave it a good rince to clear the cure seasoning and we had a bite. Bliss. Pure loxy goodness. The gf had meeting for an hour, so while she was gone I skinned, sliced and set off to the market to get the rest of the fixings.
Once she got home all that was left to do was assemble, toss a salad, and enjoy!
Perfection. And amazingly cheap. Plenty left for a lunch sandwich tomorrow as well, and the second half is still in there curing away and preparing itself for the third and final installment of this great culinary saga of adventure and intrigue. Stay tuned!
